In Italian “avanzo” means a scrap or leftover. While in Italy this concept is a bit more foreign, here in America we are very familiar with leftovers!
Growing up, my mother always used the leftover food from the night before and re-purposed it into a new meal the following day–it was just how we ate. When I became a parent of 3 children, I found myself doing this as well; both because it was economical but also because it got my children to eat the leftovers without complaining. My daughter suggested one day that I share my knowledge of cooking and re-purposing leftovers through a blog and so…here we are.

A NOTE ON MY RECIPES:
Sharing my ideas for what to do with leftovers is easy but explaining the actual recipe is a bit harder. What I mean is that I cannot give exact amounts to add because the leftover amount will always be a little different for everyone. So most of these recipes require an ‘eyeballing’ of amounts. This is also how I cook–I do not usually measure anything. What I make rarely requires exact amounts of ingredients. That is why I don’t bake often! With this kind of cooking, you can taste as you go and trust your judgement.
